Part of the reason is simple recognition - the two ears are the easiest shape in the world to spot, so even a one year old reacts to it. The other reason is range. It is one of the few themes that suits a boy or a girl, works from a first birthday to about eight years, and does not look childish in family photographs.

Those functions have adult guests and are usually photographed formally, so a loud cartoon setup looks out of place.
